All wine is acidic, but when the acidity is out of balance the wine will be noticeably tart. While the carbon dioxide (CO2) produced by fermentation contributes to the acidity of wine, your wine is likely to become less tart during fermentation.
If your wine suddenly becomes more tart in combination with an aroma of Acetaldehyde and/or Ethyl Acetate, then you may need to test the Volatile Acidity. Please contact ProVina either by e-mail at customerservice@winepod.net or by phone at (877) 922-3122 for further assistance.
