Volatile Acidity (VA) is a convenient chemical definition that refers to a method of analysis that measures only those acids that can be converted to a gas by steam distillation. In practice, VA is a measure of vinegar spoilage and is expressed as acetic acid equivalents in g/100ml (grams per 100 ml).
